At Mistletoe we are always to experiment and push the envelope with our winemaking.
In 2016 we made our first “Wild Semillon” and it was so popular we made it again in 2017.
The wine was fermented and matured in older French oak barrels using natural (or wild ) yeast indigenous to the Mistletoe Home Vineyard.The wine spent extended time on gross lees with regular batonage ( stirring) and also went through malolactic (secondary ) fermentation.
It has much more mouthfeel and texture than traditional Hunter Semillon with a wonderful balance between the acid,fruit and oak.
A complex palate with notes of honey and herbs is complemented by the typical citrus flavours of Semillon.
Drinking really well now but may be cellared for at least 5 years.
