With the vineyards in Young NSW ( where we draw the fruit for this wine) now over 20 years of age they are consistently producing really good Shiraz.
Shiraz (97%) was co-fermented with just 3% whole bunch Viognier.
This was followed by maturation in French oak puncheons for 15 months before bottling.
A prime example of the generosity and balance of Hilltops Shiraz,with the rich flavours just cruising along and through the medium bodied palate:tannins and oak and a long finish on the palate bring this wine together.
With two years plus in bottle it is now in an excellent drinking window that will see it through until 2032 at least.
Decant for 30 minutes before consumption.
