2016 BLANC de BLANCS. Methode traditionelle – bottle fermented 100% Chardonnay hand harvested from a vineyard located in Young NSW.
Initial fermentation took place in aged French oak barriques followed by 6 months on gross lees.
Secondary fermentation in bottle was followed by 30 months maturation before disgorgement in late 2018.
This a bone dry style with hints of straw,melon and honey.
An ideal aperitif style, serve well chilled.
